Taco Soup (newer and easier version) …

A few of you asked how to make Taco Soup.

I posted the original recipe (that I was given) several months ago. But since then, I’ve tweaked it and it’s even easier now!!

Ingredients:

1 can of corn
1 can of black beans
1 can of kidney beans
1 can of petite cut tomatoes
1 lb of ground turkey (or boca crumbles)
1 packet of taco seasoning
light sour cream and/or shredded cheese to top

Directions:

Cook the meat with half the packet of taco seasoning. While that’s cooking, open all the cans (DO NOT DRAIN!!!!) and dump them into a pot. Add the rest of the taco seasoning and the mean when it’s done cooking. Once it’s warm enough, it’s done! O-M-G!! This tastes even BETTER the next day for lunch.

If you are not allergic to gluten and you have not tried Boca crumbles, I really recommend them. We LOOOOOVE Boca at our house!!
